BBQ Hot Wings

BBQ Hot Wings

This recipe is for appx. 3.5 lbs. of chicken wings.  I usually double it.

1/2 cup Tabasco or your fav sauce.   (I substitute in about 30% Tabasco Chipotle flavor for a much hotter wing)
1/2 cup fresh lemon juice
1/4 cup veg. oil
2 tblspoons Worcestershire sauce
4 cloves of garlic minced
2 tspoons coarse salt
1 tspoon  black pepper

Mop sauce is 1 stick of butter with a 1/2 cup of Tabasco melted in

Rinse chicken and pat dry with paper towel.  Cut off the tips if you don't have a big grill.  I put the chicken in the smoker for a few hours and then finish them on the grill.  With the grill the skin will carmelize and they will just be so beautiful to look at.   They will have lots of smokey flavor to them, for a real nice difference from regular hot wings.   Baste them with the mop sauce to keep them moist and not burned.   I can't tell you how delicious these little beauties will taste.

This is just one of the highlights for tomorrow.   11.5% alcohol     Started with a good Porter, mixed in some chocolate chips, cinammon, spice, coffee, and aged it for several months in old bourbon kegs.   Limited run from a local brewery, you snooze you lose, in this case.   Now if you will excuse me I gotta go shine up my drinking shoes for tomorrow.   ;D

Sorry Keith, these are all heading to Moreno Valley for the game.   I made 9.5 pounds of wings and I am afraid that is not going to be nearly enough.    But being the giver that I am, I will try to blow the smoke out your way.   >:D
