Did it run before the carb rebuild?

Was the carburetor full of crap?  How long does it run?

Have you checked for spark when it craps out?

Need just a little more information and we can be dangerous.

I got the boat in 20212 and just now trying to get it going I took the carb to a local shop.. it stays on for about 3 to 5 seconds if I keep dumping starting fluid it will stay on..

Check your fuel pump and probably replace fuel lines, filters, ect

Check valve in the carb is good? Maybe the floats are too high? Sounds like the carb is starving unless you pour fuel into

I'd look at your fuel filter. See if it shows signs of water in it. To me,  it sounds like you have water in your gas
