Which is the most accurate way to check the oil? I always get a higher reading when on the trailer as opposed to in the water.

I always check it with the boat angle like its on plane hauling ass

Whatever your pan requires ... like if its a 10 qt then add 9-9 1/2. Check it in either spot an make a note to where it was then always check it in the same location/how parked or at float. I try to get my engine near the 4-4.5 degree of up angle as how its mounted ( matching crank/pump shafts ) with stringers parallel to ground.

does it really matter? even if you had the trailer jacked all the way up you'd only be adding an extra what... half quart? which is probably a good thing running at high rpms all the time and running the pan low.

On my trailer it does, I checked it jacked all the way up (didn't remember it was all the way up) noticed it was low, topped it off with a quart and a 1/2. Made it to right above the add mark. Ran it at the river and blow out so much oil I thought something was leaking, took it back to the ramp checked everything. All good no leaks. Run it again still blow out a little oil, noticed it was from the breather this time checked the level on the water and was slightly over the ads mark...

You want to know the level of the oil as it's going to sit in the motor on the water. If you just level your trailer, or check it on a flat garage floor, you'll be fine. Too much oil isn't good thing for a few reasons. As stated above you can blow oil out anywhere it can get out, making a big mess. If the crank is hitting the oil in the pan, it will whip it into a froth which doesn't pump well, plus it robs horse power. Excessive oil hitting the crank and other moving parts can create even more crankcase pressure than normal which can blow out engine seals like crank seals.

Set a level on the flame arrestor or scoop and crank the trailer jack up or down.

Well,
It is and it isn't.
Personal preference has a lot of reasons behind it.
Sort of like booze. Some like Cognac, others will be happy with light beer.
It's all about what will work for you, even though they all do the same thing in one way or another.
