I'm wondering if you need a stop at the pedal or if the pedal can just be stopped by the carb when it's wide open? Does that pressure damage the carb linkage or rods? Would it be better to build a stop at the pedal so the pedal stops first?

I can't imagine that'd be to good for the carbs, especially with a heavy foot, mine has a stop built into it, curious to see the answers here👍🏼

You must have a pedal stop. Take it from someone who experienced a stuck wide open throttle when the cable over extended. What throttle pedal do you have?

That shouldn't be too difficult to stop.

How about just a piece of tubing over the cable cut to length? Simple and no moving parts.

Just a thought.

Hmm that might be a good idea. I was picturing having to fab a bracket and maybe use an adjustable round poly bumpstop like the pic below. I thought if it had a long enough stud I could double nut it and make it adjustable
