So after spending several days, pulling my Panther Jet Drive in order to change out the steering cable and shift cable, I hooked up a new fuel line with a new Fuel Water Separator, hooked up my hose to the water system and went to crank the motor.
It was locked up? I turned off the water, pulled the plugs and cranked it over, to see a sprinkler system shooting water out of a few cylinders?
I had no issues with this before? Did I put to much water pressure? Stuck exhaust valve? Blown Head gasket? Please tell me it's something simple and it can be fixed with out pulling the engine apart?

You should always start your boat before turning on the water. Sounds like you hydrolocked your engine. I'm not an expert in this area and I am sure someone else will chime in as to what your next steps will be.
Some more helpful info will be when did this occur and how long has it been sitting after this occurred?

If you run the water before starting the boat you run the risk of filling up the the exhaust manifolds without having the exhaust gasses to push the water out. It will find its way into any open exhaust valve.

Just make sure water is out of the cylinders. Put the plugs back in and fire it up. Turn your water on AFTER the boat starts

Hopefully you didn’t bend a connecting rod during this hydro-lock ordeal, just to make sure, while the plugs are still out crank the engine over by hand making sure it will rotate 360*, if a rod is bent, the piston skirt will hit the crankshaft counterweight and stop. Consider yourself very lucky if all appears alright, I have seen this numerous times.

Yeah, I figured it all out pretty quick. Hopefully no damage done! I pulled all the plugs, spun the engine several times (with the starter..hopefully didn't bend anything) pumped out a lot water. Put the plugs back in, got it to start...ran rough. pulled the plugs again, spun in a few more times, looked like I got all the water out. plugs back in and it fired up pretty quick. still sounds a little rough, but the boat has been sitting for years, it was only last month, when I put on a used carb that I picked up of craigslist to see if it was even going to try to start. So it could be several things causing it to run rough right now.
So lesson learned! Start the motor first, then get the water flowing! I think somewhere in the back of my mind I knew that from years ago! Just was in a hurry to get it up and running again.

Earlier this summer I took a roller over the bow and my motor sucked up water at ~3,000 RPM. I pulled it off the water, pulled the plugs, cranked the water out, and got it fired up. Everything sounded great and it ran well until it didn't...I ran about twenty or so miles up and down Parker before it started knocking really bad. Turns out I really did some damage when it hydro locked. I haven't dug into the motor yet.
