I just purchased an 18' 1980 Southwind with a Dominator jet drive. I find it very difficult to steer, very sensitive. I understand that a rudder can be added to aid in steering. If this is true, what do I purchase for this? And where?

Rudders don't do a darn thing.
When you say difficult to steer, what do you mean? Fast or slow?

With the cable disconnected at the jet, is it smooth and very easy to turn? There shouldn't be any drag or resistance.

In the no wake zone, ya don't actually drive a jet boat, you heard it, like cattle.
Over steering is usually the culprit. Look further ahead, & less steering input (>1/4 turn, either way)

Also try modulating the thrust at the same time if you find you are over correcting. One pass thru the channel at havaZoo on a busy weekend and I was a nervous wreck for an hour. Steer it like you are Captain of an oil tanker, sloooow and easy, and dont get up too much speed around the docks.
