Just took the boat out for the first time since I got it and there’s a few areas around the pump where water is leaking in. What is the best way to go about stripping the old stuff and using a new sealant? And what type of sealant would you guys recommend?

If it were me I would dismantle that transom plate and re evaluate.

Gas gets stuff off real good. When you goto seal it back up, use 100% silicone.
Don't use a marine ADHESIVE type sealant or you'll never get it off.
Do you have an idea where the leaks are?

Pull the plate, clean it up real good and see how tight of a fit it is to the pump housing.if it has a decent size gap make new plates and tighten up the tolerances. You shouldn’t need a ton of silicone to seal it all up
