If the engine is turned around and has a front sump the oil will run up the dipstick tube. I put a piece of hose on the tube and push the stick down, helps to seal if it still does put a clamp around the hose to keep the stick down

I put a vent line on the pan and ran the line to a puke tank, no more flying oil, also have large valve covers.

Looking at your carb it appears to be a stock 600CFM used on marine conversions. If you go to a 850 change the vent tubes from the old to the new that will vent the gas to the inside of the carb. Also I have a Weiand Stealth manifold, you pay the freight I will donate it to you.

Also get a low pressure switch with a light, mount it in front of you on the dash. This way you don't have to read numbers, light comes on shut down, works great especially if the guage goes south and gives false info.

If its intermittent Look for a loose ignition wire or connection, maybe even the switch has become loose inside rom vibration.

Check the starter voltage draw  2 volts or less, be sure the batteries are up so you don't get a false reading.

I run the stock pan 5 qt on my 460 with a 1 1/2 qt oil accumulator, works fine

I raced a 16ft patterson hull and it steered from the right and was hairy going into a turn at 100+ mph felt like I was going over all the time. Finally after a bad flip changed it over to the left, what a difference when going into a turn.
