I/O or a jet?
If a jet, this is a piece of cheese....
Make a cardboard template, cut some 1/2" Doug fir plywood to size giving yourself a 1/4" gap all the way around, back butter the wood with resin and mat if polyester resin, brush some resin on the cleaned and dried transom and stick it up there like tile...
You can use some 2X4's and threaded rod to make a clamp... Then all you need is some finish cloth and resin to do a final covering and your pretty much done, if it's already cleaned, sanded and dry, this should take you one full day.... From start to finish.
