Right now i have a Log and Snail setup. If i were to do dry hearders how would i run the water out of the motor to the outside of the hull??

Through what is referred to as a "Dump" line, basically like a bilge pump outlet from the stat housing....

does it matter where the dump line is located? like can i run it through the old holes where the exhaust goes through the transm?

Well, I guess... You are talking about a 1/2" line going out a nearly 4" hole though... :-\

Do a search on plumbing headers. You'll have a line, 5/8" - 3/4", coming from the T-stat housing

I have 2 lines coming from the Tstat. The first one is the dump line. It goes to the transom out a bulkhead fitting 5/8" line (I think).
The other line is for the water injected headers. If you run dry headers you won't need the second line.
The dump line will be above the waterline out the transom or side of the hull.

Do I have to worry. About the heat melting the paint on the boat??

Depends on how close they are to the hull. Some guys have a heat shield to prevent burning.
Are you going with over-the-transom headers? Why not just go with water-injected?
Ceramic coating is supposed to help the headers considerably cooler.

The headers I am looking at are dry headers.
