Long enough so when you turn hard the nose of the boat doesn't hit your tow vehicle. After that it's all up to you.

What differences will I notice if I go a foot or two longer?

i added a folding tongue to my trailer and made it a little long and i plan on shortening it up. i cant back it up my driveway around the 90* turn anymore after extending it with the folding tongue. yes that extra 2 feet made a *HUGE* difference in my turning radius.
