Here is one of my staple dishes. Hope to sell it in a bar after I open one someday.
1/2 cup sour cream
1/2 cup mayonaise
1/2 tsp cumin
1/2 tsp corriander
1/4 chipotle chili powder
1/2 tsp crushed oregano
1/2 tsp dried dill weed
1/2 lime
1 minced jalapeno
1 tsp chopped cilantro
Whisk first two ingredients together, then squeeze the juice from half the lime in. The mixture should be pourable. Then add the rest and whisk well and place in fridge.
1 package bacon
1/4 white onion chopped
1 tbsp adobe chili in sauce
1 pound peeled deviened pre cooked shrimp (thawed)
Chop and pan cook on medium high one package of bacon until evenly brown. Drain bacon grease and add onion. Cook until onions are tender then add chili sauce and shrimp. Cook until heated through.
Serve on corn tortillas with a slice of avocado, shredded pepper jack cheese and cabbage and top with a tsp of the sauce that was made earlier. Consume with beer!
