This would be bitchin in the smoker then in the oven to crisp the bacon... Damn... Gonna have to do it now lol. Looks great man

Make sure u use thick cut bacon.. kinda insulates the loin alil... 380 in the oven for about 50 minutes. On a baking rack.. it would be bitchin in a smoker. I havent  tried  it in my smoker yet..

Butterfly that pork loin and sprinkle on 2 tblsp of Jack.  Then cover in you favorite BBQ rub inside and out.  Then brush on heavily a mix of brown sugar, coarse ground mustard and a bit more JD.  Close it back up, tie it closed, wrap it in bacon and throwi it in the smoker.  If you wanna go first class make up a glaze of brown sugar, butter and JD and brush it on a few time.  The bacon will come out candied and the pork will be OMG goooood.    It is even good, well actually its great, cold in a sandwich the next day.  I never make enough though sadly.   Enjoy !

Omg.... u cant go wrong with candy bacon....us redlands guys need to have a cook out.......
