so I've been kicking this idea around for a little while now and finally just tried it out and I have to say it was absolutely stellar.
This would be awesome as a paella, with maybe some steamed shellfish on top as a main course, but alone it is delicious and its really easy to make
without further ado I present...
We'll start off with our veggies, red and green bell pepper, jalapeno, fresh oregano, cilantro, white onion and of course some really good dried chorizo (spanish sausage basically)

get that rice going it's going to take 30 minutes or so

1 3/4 cup water to 1 cup of long grain white rice (fyi)
once it's done fluff it up nicely

then spread it out and place it in the fridge, it's important that the rice is cool before you start the cooking process :)

I put that in the freezer for a few minutes, checked and stirred it every once in a while
in the meantime, chop everything up nice and small and uniform

ok start your wok up (a wok is the best thing to cook fried rice derr) and get it really hot, we want the oil angry and spitting toss in a Tbsp or so of minced garlic, the rest of the veggies and your chorizo and stir rapidly, keep the stuff moving

after about a minute (sweat the veggies) push them out of the way and off the heat

one lighten beaten egg into the wok, stir rapidly to scramble, don't let it burn

mix it up with all the veggies and meat, then toss the rice in along with the fresh oregano

mix well, I added a splash of soy sauce (1 1/2-2 Tbsp maybe?) and the juice from a can of tomatoes (again 1 1/2-2 Tbsp--not much just a splash) mixed throughly, turned the heat off and then added the cilantro and mixed again

and then serve

Like I said it would be awesome with some steamed shell fish on top (shrimp/scallop) or even alone as a side dish
Absolutely stellar dish, and you know I don't say that about many.
Try it, I guarantee you'll like it
rough measurements
1 C long grain white rice
1 3/4 C water
1 Tbsp butter
Bring the water to a boil, stir in the rice and butter, cover, reduce heat and simmer for 20 minutes. remove from heat and place in a container and chill in the fridge
1 Tbsp minced Garlic
2 Tbsp Green Bell
2 Tbsp Red Bell
2 Tbsp Jalapeno
4 Tbsp Chorizo
1 Tbsp Fresh Oregano
4 Tbsp Cilantro
Chop all that small
1 Tbsp Canola Oil (corn oil etc)
Place oil in wok on high heat, add veggies an meat and stir, push to the side and add one lightly beaten egg, in with veggies. add cooked rice, soy sauce, oregano and tomato juice mix stir remove from heat, stir in cilantro and serve immediately.

Looks good! We always cook extra rice in order to have left over for fried rice.

Sorry not Spanish but fried rice I know your veggies sweat them first in a bowel with plastic rap about 2 min the heat the wok up to a nice temp really hot first put in meat cook till done the put in veggies then egg mix together then add rice flip the food and fold in not stir if u stir it will become soft u don't want the u want all the food including rice hard I just know. Ives lived in Japan and got to know how too cook it. Spanish rice I want too learn how to cook.
