Why hello there,
Today I am making a nice big fat pork shoulder along with some home made bbq sauce, cole slaw and maybe some onion crisps for the sammiches I plan on making
lets proceed shall we?
first lets make a wet rub for our pork, this contains water, apple cider vinegar, crushed red pepper, mexican chile powder, paprika, cinnamon, salt, pepper, dried bell peppers, oregano, worcestershire, tobasco and um...I think thats about it, bring it to a boil

salt and pepper out friend the pork quite liberally

brown on all sides

now place the pork in a cooking vessel of some sort, and pour the wet rub over it, then into the oven @ 325 for around 40 minutes a pound

next lets get started on the bbq sauce
assemble your ingredients, onion, garlic, mexican chile pepper, crushed red pepper, brown sugar, apple cider vinegar, ketchup, salt, pepper, cinnamon, molasses, liquid smoke, worcestershire, tobasco, salt and pepper

mince the onions and garlic pretty fine, get the wet stuff ready, a cup of ketchup, 1/4 cup of vinegar, water, brown sugar, a tbsp of liquid smoke and splash of worcestershire, tobasco
brown the onions and garlic

add the rest of your ingredients, and simmer adjust to taste, add ketchup if it's too vinegary, vinegar if it's too sweet, more liquid smoke if you want, more salt and pepper is needed etc
