Right now it's installed next to the thermostat no not adjustable I found a new one on summit rated 180-200 seems it would be better then the one I got the one I currently have is 165-185 I just don't see it ever cooling dwn to 165 I ran the truck for an hour and the fans stayed running and it's 50*outside

I don't understand.
When I do electric, I use two switches. With a bypass switch if you have AC.
One on the stat, typically cuts in at 180° and out at 165°, the second either in the radiator down low or in the water pump that cuts in at 160° and out at 150°. These would be installed in series. The air conditioner would be on a switch around both and would be on the high side of the compressor.
The one that would cut it off going down the road would be the water pump one. The water leaving the thermostat will always be at or above 180°.
It will seldom cycle at idle like a four cylinder because of the added mass.
