well when you say "its loading" (based off of your description... have you even taken the air cleaner off and let it idle on the trailer or backed into water and see if theres excess fuel? what do the plugs look like? is there soot on the transom?) if your carb is literally dumping fuel into the motor thru the overflow tubes maybe a float is stuck, or they're just set too high.
it doesnt matter if its a "set it on your motor and forget it" carb shop, its wrong. so its time to learn how things work. setting floats isnt terribly complicated and it doesnt require any special tools other than a wrench, screwdriver, and some rags. theres a few youtube videos on how to do it directly from holley.
if you dont feel comfortable trying to set them, then take it to a shop that can tune it for you and get back out on the lake and have fun.
