I've done the research myself except from a high HP BBC point of view. Here's what I understand about it. It will help any boat in all around performance. Simple things like pulling a skier out of the water will be a little eaiser. Less bounce at slower speeds. Fuel mileage should be a little better as well. If you want to set up your jet well and be done with it adding a mild stuffer in place of the rock grate and extending the snoot will give you the best all around performance your boat is capable of. Looking at the big picture the cost of a shoe/ride plate is small now. Once you put it together it becomes a large job to do it later.
