you need to measure how much force is needed to push the hatch up at their mounting point and then divide by 2... then add a few lbs for good measure in case the hatch foam gets wet. 

im going to triples on my 21.  looks cool, tows great, rides even better since i can spread the load across more axles rather than 2 stiff ones, or 1 really stiff axle.  my single axle trailer towed like balls and beat the crap out of the boat   if it has drop axles even better gets the trailer lower to the ground for better towing.   

that boat is nice.  i did tweed and it keeps the dirt in.  think about it. your car kicks up road grime and dirt... on a vinyl seat you can just wipe it off.  on tweed it gets in the fibers.  then you sit in the seat and your back gets all black.  not to mention on a snug seat the tweed would rub my beer handles and it would get sore after a decent ride.  my opinion, stay vinyl. 

i used really thin cable for hanging picture frames with.  lift an edge and get it behind the pump, etc.  then use it like a saw to cut through all the putty/silicone.  i got the idea from when i used to de-badge my cars with the double sided tape... i used fishing line for that.

getting water in the tanks is VERY common with flip style tank fills and the fuel seperator is just added protection that you wont burn water... burning water is the best way to bend a rod.  so for the $40 cost, its great peace of mind.  also it gets all the big chunks from the gas tank and then you run a smaller inline filter to the carb.

as far as dumps for the bilge pump i wouldnt run 2 into one dump.  if you run one pump, its gonna go down the hose of the other and there is no check valve in the hose/pump as that could clog.  if you're gonna run to bilge pumps, run 2 dumps. 

fuel selector can be done at the fuel separator.  go to home depot and put a 1/2" PTFE ball valve on each inlet.  the fuel pump will suck from the open side.  if they're both open it'll pull from both but favor the shortest/easiest side.

mine:

gate valve and regulator with a dump hose is the way it SHOULD be plumbed up.  looks like you also have a hose fitting for flushing as well.

leave it alone.

id be scared as hell going all the way to catalina... im guessing it would take all of what... 25-30 minutes to get there if you were able to go at a decent speed with ocean conditions permitting?

Got a lot done today, heads to carb, headers and everything else hooked up, adding oil tomorrow and gonna fire her up! Can't wait to see the difference in the new carb from the holley 750

whats that black thing going to the carb fuel rail?  it looks like its out of place.

The prop is great! I cruise 30s at about 2200rpms and it planes good. I don't have much to compare it to.

As far as the ocean I stay within the breakwater in long beach.  It would take on wave over the back to sink us. Surprisingly it was a smoother day than an afternoon at havasu.
