I'd suggest running it and asking more specific questions as they come up.  Asking an open ended question like "what would you change" is going to get you either no response or some wild suggestions that aren't really what you are looking for.

Good point. I guess what I'm looking for is, what other pumps am I capable of running?
Other than a tunnel ram manifold, and a good ignition system are there any other ways to add a little more power to a 455 without pulling the motor down?
Are there any "typical" issues with tahitis I should keep an eye out for? It seems like the transom is weak, my swim step hangers flex... alot

Power upgrades for the Olds is a very touchy subject.  The Olds doesn't like extended high rpm runs (5000+), and will not live long without major internal prep.  So, with that being said... I'd suggest making sure you are getting everything you can out of what you have.  Make sure the carb is getting full throttle and properly adjusted.  Make sure your ignition system is giving everything it can and is tuned accordingly. 

As for the hull... You need to thoroughly inspect the stringers and transom for rot, soft spots, damage, delamination... anything that could be a clue as to a future failure.  The last thing you want is to be running along at 50mph hit a wake and have the hull open up like a can of biscuits.

Also, because of the hull design I wouldn't recommend pushing it much past the 60mph range, the deep entry may cause it to get a little sketchy at higher speeds.

Haven't had to much time to update this but finally got my carpet done

And as for selling the engine shrouds, since there is alot of labor, I could probably get them done for around $300
