These however came off the back of a jet boat.
The small pieces were actually against the transome for added support.

So how hard would it be to use these as "trim tabs"? Like what kind of fabricating would need to be done. It would it just be cheaper and easier to get a ride plate or tabs?

Thats is pretty much what they were. Some 2x2 aluminum angle to mount against the back of the boat and you could cut them down to only utilize 2 turnbuckles.

This is what they came off.
Shitty picture , I know, but that the best the guy could do.

These were recessed into the hull.
Actually this is the same set up that 19ft Dana ha for sale.
