I kinda like the fact that The Mods didn't step in, and instead they let it run to a logical conclusion.  Just like the Ford vs. Chevy arguement (both place third behind Mopar and Pontiac for making cheap HP by the way) everyone has a favorite recipe/builder for making power.  It is up to the customer to decide what is right for him.  It is his money and he needs to do his research and ask lots of questions.  Lots of folks have gone to Bostick and have been very happy and his reputation seems to be well deserved.  Lots of other people have gone the crate 502 route and have been happy too, but I have never seen any evidence that an OEM warranty would still be in effect if a blower was added into the equation.
And then too, it brought Beerjet out of the closet and onto the threads again.  Be careful what you wish for people.

The further away from from the hp per ci you get, the less reliable its gonna be.
That's also assuming you are gonna be beating on it.
I like to think that the nicer you are to it, the longer they last.
My cruiser has kind of turned me into an old man in the sense that I rarely floor it.
It's not really magical when I do so I don't even bother.

Everything about a motor build is a tradeoff.  Big inch motors will make more low end torque usually but you get a lot of weight moving around which can shorten a lifespan if not balanced and assembled with extra care.  Another factor people rarely look at is the ratio between intake and exhaust flow.  Efficiency here can make up for a lot of fancy parts.  There will be a point where heads and intake can't keep up with CI.  Also boats are sooo different from how cars operate that you really need to deal with builders and salespeople who understand the unique needs of boat motors.
But you are following a well worn path, there are many 650 hp boats out there.  Maybe come out to the CJ races and talk to the guys who are running flat out for 15 minutes at a time.  That is real world reliability right there!

You ask the question 496 or 540.  Those are to different blocks.  I would be curious what you have to start with.   That would dictate the basics of my build.  You need a block with a 4.5" bore if you're going to build a 540.  You can build about 500 ci out of a 454 block, but that's it.  I believe in the saying, "There's no substitute for Cubic Inch."  So build as big as you can with what you have.  If money is no object, then go with a Dart block and build a sweet 540 that spins about 6000 rpm and makes 700 + H.P. all day long. 

Frankly, this is the conversation you have with your builder, and from what I've heard Bostic would be an excellent choice. Then you come here and announce what you decided.   As this thread has shown, the internet is full of opinions, and they're usually worth exactly what you paid for them.
