Rich/lean is going to be a tune issue from speed. Not idling, is it stalling out or a very high idle? (Either way probably related)

Depending on what carbs, could be dirt clogging the idle circuit, improperly setup throttle linkages and/or cables, Fuel pressure, a host of other things. Timing should be checked first, as I've seen ,with some others on the site, some really crazy $hit with timing issues. One boat even had the firing order wrong.

Personally, if it stalls out, I'd be looking hard for a vacuum leak first and foremost. Your Weiand Tunnel is a two piece deal, and I've seen vacuum leaks at the gaskets where the carb base meets the intake, even warped ones as it's easy to over tighten the attachment nuts. Warped throttle plates, warped metering blocks and fuel bowls on the carbs.......I could go on and on. Get a can or two of WD40 and start spraying it around with the tube strategically while its running listening for a slight increase in RPM. You will have ID'd a leak there. Keep going. If you find one, you will find several as either many gaskets have failed, or Bam-Bam tightened all the bolts on the thing.

Good luck!  Hopefully it's something minor such as a gasket or two and not requiring parts and machining to fix.

I would first get it to idle before you start making changes, just remember tuning on the trailer will have a different effect once you put it in the water, try making your tuning in the water.

I would also recommend double checking float levels, they could be off due to the abuse of traveling by truck.

Good luck.

Maybe a little more info would help, does it hold an idle at a higher rpm ? Does it rev up and responed?

i will post some pics of the linkage tomorrow its some crazy shit hym joints and shit,it took a bit to get it started but when it started it sounded real healthy there is some lag in the linkage like when i push the pedal it takes some time to pull the carbs open i dont know much so bare with me still learning. Once i got her started and kept the rpms up for a bit to warm the motor i kept having to push the throttle to keep the fucker running, then i would let off thinking it was gunna idle but nope shut down.

Here you go. Looks like an Enderle linkage  sounds like you just need some fine tuning.

Linkage looks like it's installed properly, except for the homemade throttle cable mount bracket. Nothing wrong with homemade, mine is as well, but yours is a push throttle and I'm betting that bracket flexes like a mother when you hit the pedal!  ;)  That would explain the throttle lag at the pedal. Check if the cable is mounted properly on the pedal end as well.

Be sure the air bleeds are clear, spray some W-D 40 on them, back the corner air screws out a quarter or so.

Were this my boat I would disconnect the pump, hook water to it and warm it up. My experience is that some engines just like to be warmed up before they will idle. Just my .02

That bracket does flex like a mofo im gunna do something about that, the pedal is a little rough when i push it,i will take it apart when the little one goes to sleep and see whats going on in there. Would you guys think its safe to take out next weekend to see how she runs?who knows maybe once she warms up she will idle. :-\

I think you're mostly ok. I'm just concerned, and the more I look at that throttle cable bracket, the more concerned I get, as well as the setup on the linkage.

I've never seen one on a jet boat without a cable clamp right above the mount.

Good luck, really, I think you're safe, but I'd get that shit fixed like NOW, were I you.

Later we'll talk angles of where those bellcranks are, etc.  I think they could be adjusted better, and contrary to popular opinion,  they don't need to be 90 degrees apart in every case.
