A really good custom exhaust/ fabrication shop should be able to help you out. Most good shops make up stainless exhaust systems these days. Also make sure your fabricator is going to tig weld & not mig.

http://www.rogersexhaustshop.com/Depending on the amount of distance you have between your logs & the transom, you could be able to use pre bent ss tubing welded to a couple straight sections to get it done.
Having your boat on site for fitment would be the ideal situation. If you can't do that, use your drawing skills (which honestly are not bad) to carefully draw a schematic of what you want and present that to your fabricator. Make sure you include dimensions and degree of the angle of your bend as well as overall dims of the space you have to work with one each side (left and right will be different)
Make sure your fabricator (if not a marine type shop) knows this is a water tight situation.
Be certain that your design has a constant downward slope from the log to the transom.
Lastly, make sure that you leave room in your layout for short exhaust hose sections on each end to tie it all together.
