De-rig the boat, pull everything, and I mean everything out of it. Build yourself a rolling dolly to set the hull on in the upside down position. Lift it off the trailer, flip it and set it on the dolly. Get a 6' level (or straight edge) lay it on the hull from the transom forward, start at the centerline of the hull and work outwards, make note of any low/high spots as you do this. If it's low, fill it, if it's high, shave it. Easy as pie.
