Considering the motor doesn't get very hot should I run the dump water through the oil cooler instead of the cold water through the oil cooler

Unanswerable unless you know the current oil temps.
We ran a 496 for 40 miles at wide open and the oil was always between 190° and 230°. This was with a tiny oil cooler on the dump line. I think the cooler was under 20 square inches with 140°F water going through it.
The oil ran right at 250°F with the cooler isolated. Would have been fine without it, but being on the dump, it heated the oil much quicker.
Without a known oil temp, your grasping at straws.
Should be above 220, below 260.
