I would think most marine interior places can make what you want. I would just make sure that they do quality work. I hate seeing loose or wrinkled upholstery in seats.
Did your guy Eric have a shop called A-1 in Upland. That is who did my seats. Quality work but ?2weeks? turned into 3 months, which was ok for me. But, I had to clean fiberglass and sawdust off my engine and he replaced the shifter knob that stray dogs chewed up. But super nice guy and top notch work.
He had a guy working with him that took over the shop. Hopefully, still puts out good work done right.
Another shop that seems to do good work around here is So Cal marine interiors in Montclair.
As far as the plywood, I think shops coat the wood with resin to help waterproof it.
One tip I learned talking to different shops while getting estimates, make sure the wood has a routered edge so it doesn?t cut into the upholstery. Not all the shops I talked to did that.
