Maybe. Not sure. What oil pan and where are you reading pressure and temperature?
Did nothing else change except for the addition of the cooler?

Yes a sandwich adapter it's a Perma cool it didn't look restrictive. All 3/8 and -8 lines and fittings
What gauge and what sender?? I had an automated gauge in my buggy and a cheapo sender. Same deal cruising be 80psi step on it it'd drop all the way to 20 if I got on it hard. Switched to automated gauge works perfect now. Just an idea. Doesn't hurt to try.
