So you think too much oil still and it's foaming? I think I'm down to 9 quarts now use to run 12. It read in between add and full on the dip stick

Did nothing else change except for the addition of the cooler?

Not 100% sure who makes it but it's big. Original owner thought it was 12q. I couldn't get the temp above 180 after 20 minutes of 4500 rpms at Elsinore. Never got warm enough to burn off the moisture I had a lot of froth in the valve covers. The oil would be about 60-70psi idle and once I'd hammer it to 5k it would be at 40psi. And it would drop after like 5 seconds

Yup

You are running a sandwich adapter between the stock oil filter mount and filter?  Trans Dapt?

Do the passages in the adapter look restrictive?  If TD, they are.

What size hose and fittings?  -10?

What gauge and what sender?? I had an automated gauge in my buggy and a cheapo sender. Same deal cruising be 80psi step on it it'd drop all the way to 20 if I got on it hard. Switched to automated gauge works perfect now. Just an idea. Doesn't hurt to try.

I have a mechanical gauge on the motor and electronic gauge on the dash both were similar but the mechanical reacted a little quicker

Put the engine back in after changing the pan the other day, glassed the fuel tank back in, and finished up all my electrical. Just a few odds and ends left to do.
