I personally guarantee you do not have a 5/8" outlet fitting. Probably closer to 3/8". I'm not talking about the hose. Talking about the actual dump fitting in the side of the hull.
You can use a drill index to get a diameter.
Up to about 450hp, you should be about 3/8" max. The higher the hp, the bigger the dump fitting. After about 800hp, you should have two dump lines .
You caused your own issue.
It sounds like something is plumbed incorectly if you were running at 160°F and still have water at the headers.
I would pull the tee apart and check it for a broken spring or rusty parts.
Ir may even have some crap, like a stick stuck in it.
